Kris just started his second year of medical school and so we are back to being busy, busy, busy. The rigorous medical education requires that Kris spend all of his time studying. So life as the wife of a medical student means I basically take on 90% of the house cleaning, child caring, grocery shopping and money making, so I am just about as busy as he is as he studies from sun up to sun down. I wouldn’t change anything though, staying busy keeps me happy and motivated.
On super busy mornings I like to have an easy, healthy breakfast that can be made FAST. The pictures look like a parfait but it is actually a much healthier, fat free version I like to call a Banana Ice Cream Parfait. It is so simple to make, and so delicious.
To make this put two frozen bananas in the blender and 1 tsp of vanilla, blend till it is smooth. If you don’t have a Vitamix you may want to add a couple tablespoons of almond milk so it blends easier. Pour the banana ice cream into a glass and layer your favorite berries over top. To top it off add a little of your favorite granola, mine is Nature’s Path Organic Pumpkin Flax. What is yours?
