Zoey loves “making recipes” almost as much as she loves playing in the rain. The other day she looked at me and said in a shy voice, “Hey mommy, you like making recipes with me?!” I answered that of course I did, she immediately started jumping up and down and yelled, “I LIKE MAKING RECIPES WITH YOU TOO!! YAYYAYAYAY!!!!!!”
I hadn’t planned to make something at that moment, but after that conversation we just had to. We went into the kitchen and whipped up a simple snack. She loves every minute that I let her mix or pour or carry ingredients to the counter. And I love seeing her so happy.
So naturally we have been talking a lot about what we should have for breakfast on Christmas morning. She keeps reminding me that we have to “make stuff, not buy it!” So I have been making up a menu in my mind. I thought chocolate brownie mix pancakes sounded like a great addition to our Christmas morning table. Since I have never made them before we decided to make a practice batch and had a mini pre-Christmas breakfast. They turned out delish so I thought I would share the recipe here! I stole my inspiration from this recipe.
Brownie Batter Pancake Recipe
Ingredients
Pancakes
- 1 1/2 cups Original Bisquick™ mix
- 1 cup brownie mix
- 1 cup milk
- 2 eggs
Toppings and Garnish
Chocolate Chips
Buncha Crunch Bits
Syrup
Whip Cream
Directions
- Heat griddle or skillet over medium-high heat and spray with cooking spray.
- In medium bowl, stir together pancake ingredients until blended. Pour 1/4 cupfuls onto the hot pan. Cook until the batter begins to form bubbles. Once the bubbles start to break, turn; cook on the other side until pancakes are golden brown.
- Stack pancakes on individual serving plates. Top each with whatever toppings you like!
Growing up, Christmas breakfast was a huge tradition in our family, we would eat SO much food and it would all be unhealthy and delicious. What does your family do for Christmas breakfast??
