LOVE equals LUNCH

My least favorite part of back to school season is saying goodbye every morning. For Kris, summer break is already over (he really only got a few days off in between school years 😭). The new school year means a new schedule, new hospitals and new materiel to study. It is hard to get into the swing of a new year, but Kris works SO hard.

Recently Kris has been doing a two hour commute between the hospital he is a student at, he could stay in the new town all month if he wanted. But he makes the long drive to come see us whenever he has a break! There isn’t really much I can do to help him. I happily take over the family while he is busy. But as far as school goes, he is on his own. Showing gratitude, love and support to my hardworking husband has been so important to me throughout this whole journey, but especially now as he is just starting a new school year.

So….since I can’t help him with his school work, I have been thinking of other ways to lighten his load a little. One thing I love to do is pack a lunch for him. Packing lunch is such a simple, and meaningful way to show someone you love them. It allows Kris to come home and relax after work without needing to make himself food for tomorrow after a looooong day at the hospital. What I usually do is buy snacks and finger fruits and veggies (grapes, mini carrots, etc.) that I can easily use to fill up the bulk of his lunch. A sandwich or salad takes just a minute, then I am done. For this lunch I made it feel a little fancier with a slice of brie cheese – perfect for dipping celery, carrots and pretzels in.

It actually is kind of selfish of me to make him lunch. He always sends the nicest thank you texts and that just make my day. My favorite thing to do is secretly buy a snack he loves and hide it, so he doesn’t know we have it. Then he is surprised to find it in his lunch. Lately I have been buying different flavors of Lance Sandwich Crackers. I had noooo idea there were so many flavors! I just got Grilled Cheese, Spicy Cheddar and Cheddar Cheese (we like cheese haha). But there also were Peanut Butter, Cream Cheese & Chives and even a flavor with lemon in it! So much variety! There is really something for everyone and I love that they are packed perfect for sliding into a lunch box. The fact that Lance has been making sandwich crackers for over 100 years really shows in the delicious flavor of the spreads. I love surprising Kris with a new flavor in each of his lunches, it is a tasty and simple way to show my love and appreciation for all the hard work he does.
