I talked about new years resolutions a few weeks ago in this post, one of my big goals for this year was to replace unhealthy foods in my diet with healthier options. One department I am really lacking in is breakfast! I rarely have time to eat breakfast. I am always woken by a baby needing to nurse and a toddler with a thousand requests at the crack of dawn and I often forget to feed myself. Breakfast is such an important meal, eating a good one can give you such a great start to your day.
I replaced milk in my breakfasts with Silk years ago when I started reading about how much healthier plant based foods are for long term health. It is fantastic on cereal. I get tired of cereal for breakfast though and I am more motivated to eat when I have simple, healthy and new options. I have been coming up with a few healthy, EASY breakfasts to kickstart my day. Today I am sharing my favorite with you.
It is a delicious, dairy free, yogurt parfait, layered in a mason jar. I love that I can make a batch of jars and enjoy them later. You can make these 3-4 days in advance and enjoy them for breakfast throughout the week.I haven’t tried leaving one for longer, but I bet you could, the longer you leave it the softer the granola gets. It is the perfect option for a healthy breakfast on the go. If you are running out the door every morning to work and don’t have time to make a healthy breakfast, or you have crazy kids like me, this will really help!
Mason Jar Yogurt Parfait Recipe {Dairy Free}
Ingredients:
2 containers of Silk Yogurt (I got mango flavor from Walmart, but any flavor would work, watch out for new packaging coming late January!)
1 cup of Granola
1 cup of Blueberries (or other fruit or berry)
1 tablespoon of Maple Syrup
Directions:
Step 1: Put a couple spoonfuls of Silk yogurt in the bottom of a mason jar.
Step 2: Pour on a few scoops of granola.
Step 3: Layer on a handful of blueberries.
Step 4: Repeat those three steps till the jar is full.
Step 5: Drizzle some maple syrup on top.
Guys this is SO delicious and it is healthy for you too! If you want it to be even healthier try using muesli or just plain uncooked quick oats instead of granola.

I’m like you! We have an infant in the house, and breakfast sometimes gets shoved aside. But these parfaits are an excellent idea! Plus, everyone loves a good parfait! I bet this one was amazing with the mango + blueberries and then the added crunch from the granola. Thanks for sharing this idea! #client
