The holidays are here. I mean Halloween is this week, Thanksgiving is next month, Christmas follows close after that and then in no time at all it will be New Years… I love how festive this time of year is. This Christmas we will be hosting all of my in-laws, that is 14 extra people. We have never hosted more than a few extra people in our home so it is going to be quite an adventure and I have been taking the past few weeks to come up with some simple recipes that can feed lots of people without making a huge mess.

Yesterday Zoey and I invented the most delicious little miniature caramel apple pies. They require NO baking, only a few ingredients and take just a few minutes to make (and if you are not careful they will be gone just as quick!). Since this recipe is so simple it is a great one for kids who love to help in the kitchen, Zoey had so much fun making it with me. I will definitely be saving this recipe for when all the cousins come at Christmas, and for myself year round….


Easy Mini Apple Caramel Pies Recipe


Ingredients

3 cups of Light & Fit® Carmel Apple Pie Yogurt

1 package of Keebler® Ready Crust® Mini Graham Cracker Pie Crust

1 Reddi-wip® original 13oz can

1 cup of Toffee Bits

2 Apples

Ground Clove (to garnish, optional)

Mini Caramel Apple Pie Recipe

  1. Fill the Keebler® pie crusts with the Carmel Apple Pie Yogurt all the way to the top, one container of yogurt should fill 2 pies.Easy Mini Apple Caramel Pies Recipe
  2. Cut the apples into 1/2cm thick rounds so that the core makes a small star in the center. Be extra cautious as the apples tend to slip around when cutting them this way, also I am cursed and cut myself in the kitchen almost every time I use a sharp knife. Once you have the rounds cut, use the star in the center as a guide and use a pairing knife to create apple stars.   3. Garnish!   4. I know I said three steps – but this one doesn’t really count. SERVE the pies (or just eat them all before you have a chance to… Thats what I did.) If you can resist eating all of them yourself these are an easy last minute dessert you can use when you have guests for dinner, I guarantee people will be heading back for seconds of these babies!

I can’t wait to share these effortless pies with my family when they come to visit. In fact I think I will make it a goal to ‘practice’ making them as often as possible till the family gets here.
