Who enjoyed their Mothers Day weekend?? We did! Kris and the kids made me feel extra special with some interesting gifts. If you didn’t watch my instagram story while I opened it you guys missed out. I got a card themed after Zoey’s favorite TV show, a minions hat (both picked out by Zoey;) and a shirtless Zac Effron picture from Kris??? I was just as confused by this as you guys probably are. Don’t worry though, he followed it with chocolate and roses – and my favorite  part – a delicious barbecue picnic. We grilled up some delicious pork and veggie shish kabobs. That, plus the beautiful outdoors, plus being with the people I love most in the world, made for an extra special day.

The barbecue was my idea. And since it was Mothers Day Kris couldn’t say no ;). But this barbecue recipe can be made in under 20 minutes so it really is easy, and perfect for any night of the week. It was a tiny bit chilly on Sunday, but we still made an outdoor meal happen with cozy sweaters, sizzling shish-kabobs and sticky, sweet s’mores! We also brought cold soda’s to our beachside barbecue, but with the crisp wind off Lake Erie, we probably would have been better off with some hot cocoa.

After eating we walked along the lake and skipped rocks (errrrr… Kris skipped rocks, and I embarrassed myself trying). Zoey is the queen of finding treasures on the beach, so of course she found some very special rocks, and also a few insects that she wanted to take home haha.

It was the perfect Mother’s Day dinner, but it was also just a perfect day that I want to recreate all summer long. The pork roast shish-kabobs could not have been more delicious and easy to make. Usually I have a hard time cooking pork roast, I don’t know how to cook pork roast so it isn’t chewy. BUT this time I bought a Smithfield Marinated Sweet & Smoky Pork Roast. It was easy to cook and was not chewy at all. No fancy cooking skills required for this meat, which is lucky, because I don’t have any fancy cooking skills. And since it was already perfectly marinated all I had to do to flavor it was… absolutely nothing. Mmmmmm. Guys. I have never bought Smithfield Marinated Fresh Pork before, and I feel slightly cheated that no one told me what I was missing out on. Seriously SO good. And so easy, since it was already marinated and – flavored. to. perfection.

So here is my recipe for the perfect summer bbq pork roast shish-kabobs! They take about 20 minutes to make, so you can focus more time on summer fun, and less time on meal prep. You can pick up the Smithfield Marinated Sweet & Smoky Pork Roast in the fresh meat section at Walmart, and I found all the rest of the ingredients at Walmart too. This recipe is enough to feed 2-4 adults. It could feed four me’s, but probably only two Kris’s. I would recommend making enough so you have some leftovers! It is great reheated for lunch the next day (I will tell you just how to do that in under five minutes after the recipe!).

Sweet & Smoky Pork Roast Shish-Kabobs BBQ Recipe

Ingredients

1 Smithfield Marinated Sweet & Smoky Pork Roast (Walmart)

1 green pepper

16oz (two containers) of mushrooms

1 red pepper

1 can of pineapple chunks

Olive oil

Salt

Skewers!! (I know, not a food, but this recipe would literally fail without them, so I had to put a little reminder).

Directions

Before you head to the barbecue:

1. Quarter the mushrooms. Cut the peppers in half and then slice into squares about 1″x1″. Open the can of pineapple chunks.

2. Mix the veggies & pineapple together and coat them in olive oil (about a tablespoon). Add a sprinkle of salt to taste.

3. Cut the Smithfield Marinated Sweet & Smoky Pork Roast into bite sized chunks.

4. Fill up the skewers with veggies and meat, alternating ingredients according to your preference! Pack them up in a casserole dish and head to the BBQ!

At the grill:

1. Turn on the bbq.

2. Barbecue those babies! Make sure the meat on your shish kabobs is cooked all the way through. I cut the roast up pretty small, so it took about five minutes to cook al the way the through. Just be sure there is no pink in the center.

3. Final step: ENJOY. It is impossible not to.

We had so much fun with this easy bbq recipe. I love any time saving recipe that lets us have more time for family fun and spend less time on meal prep. After we finished earing Kris used a fork to slide all the veggies and meat off of the shish kabobs into a storage container. We left that in the fridge and then heated it up for about a minute the next day in a hot skillet. It was every bit as tasty in a reheated – stir fry form. You could even microwave it to save dishes, but I just love the crispiness pan frying gives…
