My mom is basically super woman. She homeschooled me and my seven siblings, and made it feel like so much fun every day. My mom taught us to read and write, to be kind and crazy, to laugh and sing, to work hard and to play. She was (and is still) our teacher, friend, counselor, comforter and so much more. As a kid I never thought of all the work that she did. Having eight kids at home all the time and keeping a fun, friendly, happy and homeschooled household is no easy job. But she never made it seem hard.
With the summer almost over and it being back to school season, life is starting to get busy for me. We are getting ready for Zoey’s first official year of homeschool. It has made me think a lot about how I can organize my plate, so that Zoey remembers this time the way I remember my childhood. I want her to remember being happy and care free. I want her to feel inspired by a mom who knows how to smile even when things are hectic.
If you have followed along my blog for awhile, you know I am the queen of saving time in every small way possible. I have upped my game this back to school season and one way I have done that is in the way I grocery shop. I have been stocking up on everything that I can, so I don’t have to go out more than once a week. This saves me tons of time on trips to the grocery store for one or two things we have run out of.
The one thing we always run out of is milk, or almond milk I should say. I haven’t drank anything other than nut milk for seven years! Ever since I discovered that Silk Almond Milk was delicious, plant based, cholesterol free and a great source of calcium, I never switched back. I love the creamy, nutty taste and the fact that it is good for my body.
I drink Silk by itself, use it in sauces, baking recipes, on cereal and in smoothies. Like I said, we always run out, so you will understand how excited I was when I discovered that Walmart carries shelf stable Silk Almond Milk, not just refrigerated. It is just what I need to stock up on so I never run out of my go to snack and favorite recipe ingredient. It is perfect for back to school season. The Silk® Unsweetened Vanilla Almondmilk Bottles is what I buy for most of my milk needs. The Silk® Almondmilk with Caramel flavor is delicious by itself, so I grab those for on the go snacks too.
One of my favorite things to make with Silk® Unsweetened Vanilla Almondmilk is a dairy free parfait. It is a delicious way to start the day and only takes a couple minutes to make.
Dairy Free Parfait Recipe
Ingredients:
1 Bottle Silk® Unsweetened Vanilla Almondmilk
4 Frozen Bananas
5 Fresh Strawberries
Granola
Coconut Flakes (optional)
Directions:
1. Blend the Silk, frozen bananas and strawberries in your blender to create the ‘yogurt’ for your parfait.
2. Pour your yogurt into a cup.
3. Top with granola, a little more smoothie, some coconut flakes and strawberries. And enjoy!
That’s it! A delicious way to start your mornings during the back to school season. Making a healthy, delicious breakfast may not seem like a big deal, but I have noticed it is all the smart, small decisions you make daily, that add up to a beautiful happy and healthy life. My ultimate goal is to lead my day with a smile, the way my mom does, and this is just one small thing that saves me some time, lowers my stress level and makes it easier to smile.

You are the cutest! And I Halloween to know first hand being a homeschool mom how busy this time of the yeast is. I hope my kids have good memories and positive examples they want to bring into their own home one day. Your mom sounds pretty special. And is obvious your princess is having a pretty good life too!
