Who else feels like they could really get used to this summer weather long term?! This happens to me every year. I think winter is kind of awesome – and then summer comes and my mind goes NOPE. Suddenly I never want winter again. I just want this forever. In my free time I look up way too expensive houses on the beach in Hawaii and dream of living there year round. But for now we are just taking advantage of the summer while it lasts and milking it for all it is worth!
With all the summer go, go, go I am constantly looking for ways to make my on-the-go life a little easier. Watermelon naturally has become a huge part of our summer lifestyle – and it really is no surprise when you think of all the benefits of eating watermelon. It is so deliciously hydrating and a perfect snack for every sunny day. Not to mention, it is inexpensive! In honor of our favorite summer fruit I thought I would share a delicious on-the-go snack that will keep you hydrated all summer long (without worrying about chugging a ton of water!). This watermelon juice recipe is super simple – it should only take you a few minutes to make.
5 Minute Sparkling Watermelon Juice Recipe
What you need:
Seltzer water
Honey
Directions:
1. Cut the watermelon in half and scoop small melon balls out of the center, place on a cookie sheet and freeze.
2. Once the watermelon balls are frozen scoop the rest of the watermelon into your blender. Blend well!
3. Add honey to achieve desired sweetness and blend again.
4. Pour the melon juice into mason jars to 3/4’s full, fill the rest with seltzer water, add a few watermelon ice cubes to keep the drink cool and put the lid on!
It is just that easy to have a delicious, sparkling watermelon juice drink you can carry with you everywhere you go. We love bringing ours to the beach! You can also put them in the fridge to save for later. Don’t add the seltzer water to the melon juice unless you are going to be drinking it the same day though. Adding the seltzer water just hours before drinking guarantees that delicious fizz!

That looks so so yummy! I am going to keep my eyes open for a watermelon at the market and try that as soon as I can. They are not in season here yet but as soon as they are we will snap
